Chicken Noodle Coconut Curry Sweet Potato Soup

Ingredients
- 1 whole chicken,cut into pieces
- water to cover chicken in pot
- 1 large can chicken broth
- 1 can coconut cream or milk (15 oz.)
- 3 large sweet potatoes or yams
- 1 large sweet onion
- 1 green bell pepper
- 1 red bell pepper
- 3 stalks celery
- 1 large bag noodles (any kind) or 2 C. cooked rice
- salt & pepper to taste
- 2 tsp. curry powder or enough to taste
Directions
Put chicken on for a slow boil for about 25 minutes. Chop all the vegetables and take the chicken out to cool down. Save the broth, but check for bones. Add vegetables to broth, simmer for 20 minutes, then add canned chicken broth and coconut cream. Simmer for 15 minutes, de-bone chicken, and add to soup. Add salt and pepper, curry powder and noodles, and simmer for 20 minutes until noodles are done. Enjoy!
