  • 1 1/3 C. uncooked orzo pasta
  • 2 Tbsp. butter
  • 3/4 lb. boneless, skinless chicken breasts, chopped
  • 2 green onions, sliced
  • 2 cloves garlic, finely chopped
  • 1 C. cherry tomatoes, halved
  • 2 Tbsp. flour
  • 1/2 tsp. dried thyme
  • 1/4 tsp. pepper
  • 1 C. milk
  • 1/2 C. grated Parmesan cheese

Cook and drain the pasta according to the directions. Meanwhile, melt the butter in a saucepan and cook the chicken, onions, and garlic about 5 minutes. Stir in the flour, thyme, and pepper and cook while stirring until smooth. Slowly add the milk and heat to boiling. Stir in the cheese until melted. Pour the chicken mixture over the pasta and serve with the tomatoes.
