This pasta salad is easy to make when you use store-bought grilled chicken and the orzo makes the pasta salad unique. All in all, it’s a delicious and convenient chicken dinner.

  • 1 ¼ cups orzo
  • 3 cups chopped grilled chicken breast strips
  • 1 ½ cups baby arugula
  • 1 cup halved cherry tomatoes
  • ½ cup chopped red bell pepper
  • 1 teaspoon chopped oregano
  • 1 tablespoon olive oil
  • 2 tablespoons red wine vinegar
  • 8 tablespoons crumbled feta cheese
  • Salt and pepper

Boil the orzo for about 10 minutes and then drain. Transfer the orzo to a large bowl and add the grilled chicken, arugula, pepper and oregano. Toss to combine. In a separate bowl, mix the vinegar and olive oil and season with salt and pepper. Whisk together and drizzle the mixture over the pasta. Toss to coat and sprinkle feta cheese over the bowl.
