Chicken Pasta Salad with Basil Dressing

The homemade dressing really makes this chicken and tomato pasta.

  • 1 clove garlic
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 c. wine vinegar
  • 1/4 c. oil
  • 1 Tbsp. fresh basil
  • 1 Tsp. dried dill
  • 2 1/2 C. cooked chicken
  • 2 C. cold cooked pasta
  • 1/2 C. sliced, seeded and peeled cucumber
  • 1/2 C. halved cherry tomatoes
  • 1/2 C. sliced ripe olives

For basil/dill dressing place garlic, salt, pepper, vinegar, oil, basil and dill in a blender or a food processor and mix well. For salad ingredients mix cooked turkey, cold pasta, sliced cucumber, halved cherries and ripe olives. Toss dressing with salad ingredients. Cover and marinate at room temperature. Best if made the day before.

  • Made this yesterday, and is real, real, good. Never know which wine vinegar to use. . .Red or White, so I used the white wine. So good!
