Chicken Pasta Soup
Ingredients
- 1 whole chicken breast, boneless
- season salt
- 1 C. carrots
- 1/2 C. celery
- 1/2 C. onion
- 1 bay leaf
- 12 C. water, divided
- 1-2 tsp. salt
- 1/2-1 tsp. pepper
- 1 16-oz. box Acini Di Pepe pasta
Directions
Rinse chicken breast and sprinkle with season salt. Place chicken, carrots, celery, onion, bay leaf and 8 cups of water in a large pot. Cook,covered on medium high heat for 45 minutes.Take pot off heat. Remove chicken and cut into small pieces. Return chicken to pot.
Return to heat. Add 4 cups water , salt and pepper. Bring pot back to boil and add Acini Di Pepe. Cover pot and cook about 20 minutes longer or until Acini Di Pepe is tender. Remove bay leaf and enjoy!
