Pasta salad is an easy dish and while it is usually a side, this salad uses a thicker pesto sauce and adds chicken for protein so that the delicious pasta salad can be served as the main course! Plus, it doesn’t need to be warmed up so it’s a great lunch to send the kids to school with!

  • 1 package bow tie pasta
  • ½ cup pesto sauce
  • 2 boneless skinless chicken breasts
  • 1/3 cup sun-dried tomatoes
  • 2 minced cloves garlic
  • 1 teaspoon olive oil

Boil a large pot of water and add the pasta. Cook for 10 minutes and then drain the pasta. Cut the chicken into bite-size pieces. Heat a skillet over medium heat and add the olive oil. Then add the garlic and once the garlic is tender, add the chicken. Cook until the meat is cooked through and transfer to a large bowl. Pour the pasta into the large bowl and add the sun-dried tomatoes and pesto sauce. Toss to combine and coat completely. Refrigerate before serving.
