Chicken Piccata

Ingredients
- 1 egg
- 3 Tbs. lemon juice, divided
- 1/4 C. all-purpose flour
- 1/8 tsp. garlic powder
- Dash paprika
- 4 chicken breast halves, skinned and boned
- 1/4 C. butter or margarine, melted
- 2 chicken bouillon cubes, dissolved in 1/2 C. boiling water
Directions
Beat egg with 1 tablespoon lemon juice. Combine flour, garlic powder, and paprika. Dip chicken in egg mixture, then in flour. Brown both sides of chicken in butter. add bouillon and 2 tablespoons lemon juice to chicken. Cover and simmer 20 minutes or until tender. Serves 4. Freezes well.
