These half-moon pitas filled with delicious a chicken and fresh salad mixture that will be sure to win you over. They are also great to pack into your children's lunch boxes.

  • 2 C. of cooked (cubed) chicken
  • 1/2 C. of mayonnaise (low-fat works just as well)
  • 1/2 C. of your favorite flavor of cream cheese
  • 1/4 C. of diced fresh tomatoes
  • 1/4 C. of diced cucumber
  • 6 pita breads
  • 6 lettuce leaves
  • salt and pepper to taste

In a large bowl, combine the chicken cubes, mayonnaise, cream cheese, cucumber, tomatoes, salt and pepper. Cut the pita breads in half, line each with a lettuce leaf, spoon in the chicken mayonnaise mixture and you are done!
