  • 1 boxed pie crust
  • 1/3 cup butter
  • 1/3 cup flour
  • ¼ cup onion, chopped
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1½ cups chicken broth
  • ½ cup milk
  • 3 cups cooked chicken breast, cubed
  • 2 cups frozen mixed vegetables, thawed

Preheat the oven to 425°F. Line a pie pan with the crust, cutting off the access and rolling it back out for the top layer. In a medium saucepan, melt the butter, add onion and cook for 2 minutes. Stir in the flour, salt, pepper, broth, milk and mix well, cooking until thickened. Stir in the chicken and vegetables. Remove from heat and carefully pour into the pan. Top with a crust and poke several holes with a fork in the top crust. Bake for 30-40 minutes, or until crust is golden brown. Let stand for 5 minutes before serving.
