Chicken, Potato and Cheese Bake

- 6 clove garlic, diced finely
- 1 medium onion, diced
- 2 Tbs olive oil
- 3 boneless chicken breasts
- 24 oz salsa sauce.
- 3 large baking potatoes
- 1 stick butter or margarine
- 2 C shredded cheddar cheese.
Heat Oven to 425º. Place potatoes on rack with light coating of oil, puncture several holes in them, and cook for 50 minutes, flipping them halfway through.
Cut chicken breasts into long strips, then saute on the stovetop in a pan with olive oil and salsa mix. Cook on a low-medium setting for 12 minutes, flipping halfway through.
Peel and dice garlic and onions, then add to chicken mix. Shut off heat, cover the chicken salsa, and let simmer for 10 minutes more. Remove from pan.
Remove potatoes from the oven, chop into chunks and mix with chicken salsa. Sprinkle heavily with cheese, then serve.
