Chicken Ravioli Stuffing Casserole

I had a bag of chicken ravioli on hand that I wanted to use in a casserole. I looked for a recipe and couldn't find one, so I improvised and came up with this recipe. It is really easy and tastes great!

  • 1 bag Rosette chicken and herb ravioli
  • 1 box herb stuffing mix
  • 1 2/3 C. very hot water
  • 6 oz. fresh mushrooms, sliced
  • 1 can cream of chicken and herb soup
  • 1/3 C. hot water
  • 1 C. shredded white cheddar cheese

Cook ravioli according to package directions. Place stuffing mix in a 2-qt. baking dish coated with cooking spray. Add 1 2/3 C. very hot water, stir to combine. Let stand while ravioli cooks, about 5 minutes. Slice mushrooms, add to stuffing. Remove ravioli with a slotted spoon, place over stuffing in dish. Combine soup and 1/3 C. hot water, whisk to blend. Pour over ravioli, gently stir to incorporate all. Top with cheese. Cover and bake at 350 degrees for 30 minutes.
