Chicken Rice Gumbo
Ingredients
- 3 cans (14-1/2 oz. each) reduced sodium chicken broth
- 1 lb. boneless skinless chicken breasts cut into bite-size pieces
- 1 can (15 oz.) whole kernel corn, drained
- 1 can (14-1/2 oz.) stewed tomatoes, no salt added, undrained, chopped
- 1/2 tsp. hot pepper sauce
- 1/2 C. Minute Premium White Rice, uncooked Premium Saltine Crackers, any variety
Directions
Heat all ingredients except rice and crackers in large saucepan on medium-high heat to boil. Reduce heat to low; cover. Simmer 15 minutes. Stir in rice; simmer an additional 5 minutes or until chicken is cooked through and rice is tender. Serve with crackers.
