  • 1 lb. chicken, cubed
  • 1 onion, chopped
  • 3 carrots, sliced
  • 3 celery, sliced
  • 1 C. brown rice, cooked
  • 1 C. rice
  • 2 chicken cubes
  • 1/4 C. butter
  • 2 tsp. parsley
  • 2 C. water

Combine all ingredients in large crockpot and cook on high 4 hours or low overnight. OR: Bring to a boil on stove top in kettle, then low heat for 2 hours.

  • OMG 2cups of water is not even near enough liquid was nothing like soup,more like 8 cups and 8 chicken cubes,for a top 10 ten someone didnt give the right directions come on,wasted alot of time and money for this soup,it was more like mashed potatoes thick!

  • Hi Patl23, I think because the white rice is minute rice and the brown rice is not, the two will cook at different speeds. That's why they're not ALL cooked or uncooked.

  • why do you need cooked brown rice and uncooked or cooked white rice?? I don't get it.

  • Even 3 cups of water was not sufficient to provide a soup consistency. It would be nice to have the actual requirement provided along with any adjustments to the number of boullion cubes, etc.

  • I have been making chicken rice soup for years. I make it like my mom always did. She used broth from cooking the chicken and also added a large can of tomates. (leave out the boullion cubes)

  • I made this soup and added chicken broth,I thought it kind of strange that there was no liquid in the recipe. It was delicious.
