Chicken Rolled With Proscuitto and Cheese

- 1 lb. thin sliced skinless chicken cutlets
- 8 oz. Havarti cheese, sliced
- 4 oz. prosciutto, sliced
- 1 Tbs. olive oil
- Salt and pepper to taste
Preheat oven to 350 degrees F. Spread cutlets and season to taste with salt and pepper. Place a slice of prosciutto on chicken cutlet. Roll cutlet and secure with a toothpick. Place in pan seam side down. Repeat with remaining cutlets. Drizzle olive oil lightly over cutlets and bake 20 minutes. Spread cheese over cutlets and cook five minutes longer. Let cutlets rest for at least five minutes before serving.
