  • 4 large chicken breasts, skinless
  • 3 C. fresh baby spinach, chopped
  • 1 tomato, chopped
  • 1/4 C. crumbled feta cheese
  • 2 C. pasta sauce
  • 3 cloves garlic
  • 2 Tbs. olive oil
  • Salt, pepper, and oregano to taste
  • 2 C. chicken stock
  • 8 Tbs. butter
  • 1 bottle champagne

Preheat your oven to 375 degrees F. Lay out chicken breasts on plastic wrap. Fit them together to make a rectangle shape. Put another layer of plastic wrap on top of chicken. Flatten chicken with an object of your choice. Mix spinach, pasta sauce, feta and sauce. Place in center of chicken. Roll the chicken up around mixture. Once chicken is rolled up, mince garlic and rub it outside with olive oil. Season with salt, pepper and oregano. Place chicken on greased roasting pan. Add a layer of chicken stock. Cook for 20 to 25 minutes. Let chicken cool for a few minutes before slicing it.
