Chicken Salad

This tasty chicken salad is served in a seeded tomato for an elegant presentation – perfect for luncheons!

Ingredients

  • 4 chicken breasts
  • Salt and pepper
  • Paprika
  • Garlic powder
  • 1 green pepper, diced finely
  • 2 C. onion, diced finely
  • 1 C. celery, diced finely
  • 1 red pepper, diced finely
  • 4 boiled eggs, diced finely
  • 1 Tbs. Carnation milk
  • 1 C. mayonnaise
  • 1 large tomato

Directions

Take chicken breasts and season well with salt, pepper, paprika and garlic powder. Roast in oven with skin on for 35 to 40 minutes at 325 degrees. Mix together green pepper, onion, celery, red pepper, and eggs. Skin chicken breast and cut into pieces. Mix with vegetable-egg mixture. Add Carnation milk, mayonnaise and mix well. Season to taste. Quarter a large tomato and seed. Serve salad inside hollowed out tomato on a bed of Boston lettuce. Add more onions if you'd like.
