  • 1 rotisserie chicken
  • Radishes
  • Walnuts
  • Romaine lettuce
  • Red onion
  • Bell peppers
  • ½ cup olive oil
  • 1/3 cup fresh lemon juice
  • 1/3 cup dark molasses
  • 1 garlic clove, minced
  • 1 tablespoon Dijon mustard
  • ¼ cup apple cider vinegar
  • 2 teaspoons ground coriander
  • ½ teaspoon salt
  • ½ teaspoon pepper

Use a fork to shred the chicken. Roughly chop the radishes, walnuts, lettuce, red onion and bell peppers in a bowl and set aside.

In another bowl, mix the olive oil, lemon juice, molasses, garlic, mustard, vinegar, coriander, salt and pepper. Whisk together until fully combined.
