  • 1 can Campbell's condensed Cream of Chicken Soup
  • 1 1/3 C. hot water
  • 3/4 C. uncooked long grain brown rice
  • 1/2 tsp. onion powder
  • 1/4 tsp. black pepper
  • 1/2 C chopped celery
  • 1/2 C chopped carrots
  • 1/2 C broccoli florentines
  • 1/2 C chopped red pepper
  • 1 1/4 lb. skinless, boneless chicken breast cut in halves
  • 1/2 C shredded mild cheddar cheese

Mix and stir up the soup, water, rice, onion powder, black pepper, celery, carrots, red pepper, and broccoli in a bowl and then pour into your casserole dish.  Once your mixture has been placed into the casserole dish add the rice mixture and chicken on top.  Preheat your oven 375 degrees and cook for about 50 mintues.  Cook until the chicken in cooked all the way through and the rice done.  Once you have pulled your casserole dish from the oven be sure to top it with your shredded cheese and then let it sit for about 10-15 minutes. Stir it up and serve this great casserole for any dinner time meal.
