  • 1 pastry shell
  • 1 cup diced cooked chicken
  • 1 cup chopped spinach
  • 1 cup shredded cheddar cheese
  • ½ cup chopped sweet onion
  • ¾ cup half-and-half
  • ½ cup mayonnaise
  • 3 eggs
  • Salt and pepper

Directions

Preheat the oven to 350 degrees F and sprinkle ¼ cup of the cheese into the pastry shell.
In a bowl, mix the chicken, spinach, remaining cheese, and onion.
Pour the mixture into the pastry shell.
In another bowl, whisk the eggs, mayonnaise, and half-and-half with a bit of salt and pepper. Pour the egg mix over the chicken and bake for 40 minutes. Let the quiche stand for 15 minutes and then serve.
