Chicken Tarragon
Ingredients
- 1 lb. chicken breast tenders
- 1/4 tsp. salt
- 1/4 tsp. ground black pepper
- 1 lb. asparagus, cut into l-inch pieces
- 1 Tbs. olive oil
- 1/4 C. white wine
- 1 Tbs. dried tarragon leaves
- 3 C. rice
- chicken broth
Directions
Season the chicken with salt and pepper. Cook the rice using the chicken broth. In a large skillet cook the chicken and asparagus in olive oil. Use a medium/high heat for 2-3 minutes. Add the white wine and tarragon. Let simmer for 1 minute. Add rice and heat thoroughly.
