  • 4 skinless boneless chicken breast halves
  • 3 tablespoons lemon juice
  • ¾ cup vegetable oil
  • Teriyaki Sauce
  • Lettuce and mixed greens
  • 2 chopped tomatoes
  • 2 sliced red bell peppers
  • 1 cup halved cherry tomatoes
  • 1/3 cup mozzarella cheese
  • Salt and pepper

Brush the chicken with teriyaki sauce and then grill the chicken over medium-high heat for 8 minutes on each side. Brush the meat with more sauce as needed as it grills. Cut the chicken into strips and set it aside. In a small bowl, whisk the lemon juice and vegetable oil together. Season with salt and pepper. Combine the chicken strips, cheese, peppers, tomatoes, and lettuce in a serving bowl and pour the dressing over the salad.
