  • 2 lbs. chicken thighs
  • 3/4 C. chili sauce
  • 3/4 C. packed brown sugar
  • one 1.3-oz. envelope dry onion soup mix
  • 1/8 tsp. cayenne pepper

Spray a 5-quart slow cooker with vegetable cooking spray and arrange chicken pieces in the bottom of the cooker.  Combine chili sauce, brown sugar, dry onion soup mix, cayenne pepper, and 1/4 cup water. Spoon over chicken.  Cover and cook on low for 6-7 hours.  Serve over hot, cooked rice.

  • I have made this recipe twice, both times for company. It's super easy to prepare and my dinner guests loved it! The chicken comes out so moist and tender and the sauce is delicious. Instead of rice, I cooked polenta in chicken broth and added freshly grated Parmesan cheese at the end. I then spread the polenta out to cool, cut it into circles and fried until it was slightly browned and crisp. The chicken and sauce was so good when spooned over the polenta. I was asked for the recipe both times. This one is a keeper!
