Ingredients

  • 1 yellow onion, diced
  • 2 lb. chicken thighs, skin removed
  • 3 cloves garlic, minced
  • 1 Tbsp. grated fresh ginger
  • 1 tsp. ground pepper
  • 1 Tbsp. garam masala
  • 2 cans tomato sauce
  • 1/3 C. half-and-half
  • 1/4 bunch fresh cilantro, chopped

Directions

Place the diced onion in the bottom of a slow cooker. Put the chicken on top and add the minced garlic, ginger, pepper, and garam masala. Pour the two cans of tomato sauce over the chicken and spices and cover. Cook 8 hours on low until the chicken is cooked through. Chop the chicken into pieces or place on skewers. Stir in the half-and-half and return the chicken to the slow cooker. Serve over rice or lettuce with cilantro on top.
