Chicken Tortellini Soup

This is a very quick and easy way to serve your whole family! Just add garlic bread, and you have a complete meal. Also good for parties, lunches, and picnics.

Ingredients

  • 3 lb. skinless boneless chicken breast, cut 1/2- to 1-inch pieces
  • 2 Tbs. olive oil
  • 1 chopped onion
  • 1 chopped bell pepper
  • 1 1/2 clove minced garlic
  • 3 14 oz. cans chicken broth
  • 1 14.5 oz. can Italian style diced tomatoes
  • 1/3 C. chopped parsley
  • 1 tsp. chopped oregano
  • 1 Tbs. chopped basil
  • 1 18 oz. pkg. refrigerated cheese tortellini

Directions

In large pot, cook and stir chicken in olive oil 2-3 minutes or until no longer pink. Remove chicken from pot with slotted spoon. Add onion, bell pepper and garlic to pot. Cook and stir until onion is tender. You can add a little chicken broth to keep from caramelizing. Stir in broth, undrained tomatoes, parsley, basil, and oregano. Bring to boiling, cover and simmer 4-6 minutes. Reduce heat; stir in chicken and tortellini; continue to cook covered for 7-10 minutes.
