Chicken Vegetable Alfredo Soup

Use a jar of Alfredo sauce for an easy and delicious soup.

  • 1 C. chopped broccoli
  • 1/2 C. chopped carrots
  • 1/2 C. chopped onion
  • 1/2 C. diced red bell pepper
  • 1 garlic clove, minced
  • 1 14oz. can chicken broth
  • 2 C. diced cooked chicken
  • 1 Tbs. snipped fresh basil
  • 1 (16 oz.) jar Alfredo sauce
  • Grated fresh Parmesan cheese

Place broccoli, carrots, onion, bell pepper and garlic in 3 qt. saucepan. Add broth; bring to a boil. Cover, reduce heat and simmer, uncovered, 5 minutes or until vegetables are crisp tender. Add chicken and Alfredo sauce to broth; simmer 5 minutes or until heated through. Remove from heat; stir in basil. If desired, ladle soup into crispy bread bowls. Sprinkle with Parmesan cheese.
