Chicken with Apricot Glaze

  • 2 whole chicken breasts, skinned, boned, halved, and flattened
  • 1/2 C. flavored bread crumbs
  • 4 mushroom caps, stemmed
  • 2 tsp. butter
  • Glaze:
  • 1/2 C. apricot jelly
  • 2 garlic cloves, minced
  • 1/8 tsp. ginger
  • pinch crushed red pepper
  • 1 Tbs. white vinegar
  • 1 Tbs. soy sauce

In a flat dish, press crumbs into chicken on both sides.  Mix glaze ingredients together in a bowl.  Using half the butter, butter one oven-proof casserole dish.  Lay out chicken in the casserole dish.  Top with mushroom caps.  Spoon apricot glaze on the chicken and mushrooms and dot with remaining butter.  Bake in a preheated 400 degree oven for 20 minutes. Remove chicken to heated serving plates and spoon remaining glaze on chicken.
