Chicken with Basil and Prosciutto

This chicken with basil and prosciutto dish is a great fall/winter recipe. The flavors blend nicely.

Ingredients

  • 2 chicken breasts, sliced into thick strips
  • 15 slices prosciutto (thin)
  • fresh basil leaves
  • 6-8 slices Horseradish Cheddar cheese
  • 1 Tbs. dried dill or 1/3 C. fresh
  • 3 Tbs. white Worcestershire sauce
  • 3 Tbs. olive oil
  • paprika

Directions

Preheat the oven to 400 degrees. Slice the chicken breast into approx. 15 thick strips. Drizzle the olive oil onto the bottom of the baking dish. Lay the prosciutto flat. Top with basil leaves. Put chicken strips on top of prosciutto and basil and roll it up. Place in the pan. If there is any leftover prosciutto, chop up and drop into the dish. Sprinkle chicken rolls with Worcestershire sauce and dried or fresh dill. Lay the cheese over the top of the chicken. Sprinkle with paprika. Bake at 400 degrees for 20 minutes.
