Chicken With Carrots and Onions

Simple to make, and delicious to eat, I really love this healthy chicken and veggie recipe.

  • 6 portions chicken
  • 9 oz. carrots, thickly sliced
  • 9 oz. onion, roughly chopped
  • 1 teacup olive oil
  • salt
  • pepper
  • 1 glass white wine

In a pot, heat the oil over a medium fire and add the chicken pieces. Brown them for about 10 minutes. Pour in the wine and add the onions, the carrots, salt, pepper and the appropriate amount of water. Cook over a medium fire for about 1 1/2 hours.

Serve with: Cinnamon-Apple Granola
