Chicken with Cherries

Ingredients
- 2 whole chicken breasts, skinned, boned, halved, and flattened
- 1/2 C. flavored bread crumbs
- 1 sm. can pitted sour cherries in water, liquid reserved
- 1 tsp. sugar
- 1/2 tsp. grated lemon rind
- 1/8 tsp. allspice
- 2 tsp. butter
- 1 sm. onion, finely chopped
- 1/2 C. almonds, sliced
Directions
In a flat dish, press bread crumbs into chicken on both sides. In a mixing bowl, mix cherries, cherry juice, onions, allspice, lemon rind, and sugar. Place breaded chicken in a casserole dish. Spoon cherry mixture around the chicken. Top with sliced almonds and dot with butter. Bake in a preheated 400-degree oven for 20 minutes. Remove chicken to heated plates. Spoon cherry mixture over and around chicken.
