Chicken with Dried Fruit Sauce
Ingredients
- 4 boneless skinless chicken breast halves
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 2 tsp. margarine
- 1 C. mixed dried-fruit bits
- 3/4 C. Riesling or other sweet white wine
- 1/4 C. water
- 5 whole cloves
- 2 3-inch cinnamon sticks
- 1 Tbs. brown sugar
- 1/2 tsp cornstarch
- 2 Tbs. water
Directions
Place each piece of chicken between 2 sheets of heavy-duty plastic wrap. Flatten to 1/4-inch thickness, using a meat mallet or rolling pin. Sprinkle with salt and pepper. Melt margarine in a large nonstick skillet over medium-high heat. Add chicken, and cook 3 minutes on each side or until done. Remove chicken from skillet; set aside, and keep warm. Add dried-fruit bits, wine, water, cloves, and cinnamon sticks to skillet, and bring to a boil. Reduce heat, and simmer, uncovered, 6 minutes. Combine brown sugar and next 2 ingredients; stir well, and add to fruit mixture. Bring to a boil; cook 1 minute, stirring constantly. Discard cloves and cinnamon sticks.
