Chicken with Peas

Adding onions and sweet peas not only makes this chicken healthy, but extra delicious too!

  • 1 2.5-lb. fryer
  • 2 C. tomatoes
  • 1/2 C. white wine
  • 1 garlic clove, minced
  • salt
  • pepper
  • 1 lb. onions, sliced
  • 1 C. tomato sauce
  • 1 block butter
  • dash allspice (optional)
  • 2 cans sweet peas

Wash fryer, cut in serving pieces. In large frying pan, brown chicken in butter, and remove to deep saucepan. Brown onions in pan drippings, and pour over chicken. Add wine, cover, and simmer for 10 minutes. Add tomatoes and seasonings, cook slowly for 1 hour, or until chicken is cooked and sauce has thickened. Drain peas, and add to sauce. Bring to boiling point, and remove from heat.
