Chicken with Sweet Potatoes and a Tasty Glaze

  • 1 whole chicken, quartered
  • 1/2 C. plus 2 Tbs. flour
  • 1/2 tsp. ground nutmeg
  • 1/2 tsp. cinnamon
  • 2 lg. sweet potatoes, peeled and sliced
  • one 8-oz. can pineapple chunks, liquid reserved
  • one 10-oz. can cream of chicken soup
  • 2/3 C. orange juice

Wash and dry chicken pieces.  In a bowl, combine 1/2 cup flour, nutmeg, and cinnamon.  Coat chicken with flour mixture.  Place sweet potatoes and pineapple in the bottom of a crockpot sprayed with vegetable cooking spray. Arrange chicken on top.  In a bowl, combine chicken soup, orange juice, and remaining flour. Pour over chicken.  Cover and cook on low for 7-9 hours or on high for 3-4 hours.  Serve over hot buttered rice.
