Chicken with Yellow Rice

You may know it as saffron rice, but I always call it yellow rice!

  • 1 fryer chicken, quartered
  • 1/2 tsp. garlic powder
  • one 14-oz. can chicken broth
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • one 4-oz. jar pimientos, drained
  • 1/3 C. prepared bacon bits
  • 2 Tbs. butter, melted
  • one 5-oz. pkg. saffron yellow rice

Sprinkle chicken with garlic powder, salt, and pepper.  In a skillet, brown chicken quarters in a little oil.  Place chicken in a slow cooker sprayed with vegetable cooking spray and pour broth in slow cooker.  Combine onion, bell peppers, pimientos, and bacon bits. Spoon over chicken.  Cover and cook on low for 4-5 hours. Remove chicken from cooker, stir in rice mix and butter, and return chicken to cooker. Cover and cook 1 hour or until rice is tender.
