Ingredients

  • 1 can chickpeas
  • 1 diced carrot
  • 3 chopped scallions
  • 2 tablespoons minced parsley
  • 2 garlic cloves
  • 1 cup panko breadcrumbs
  • 1 cup chickpea flour
  • 3 tablespoons lemon juice
  • 1 tablespoon curry powder
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon red pepper
  • ¾ teaspoon chili powder
  • ¼ teaspoon pepper
  • ¼ teaspoon salt
  • 4 burger buns
  • Lettuce
  • 2 sliced avocados
  • 1 sliced tomato
  • 1 sliced red onion

Directions

Combine the chickpeas, carrot, garlic, and scallions in a food processor. Process until everything coarsely shopped. Add the breadcrumbs, lemon juice, 1 tablespoon olive oil, chickpea flour, curry powder, cumin, red pepper flakes, chili powder, and salt and pepper. Pulse until everything is well mixed. Shape the result into 4 patties. Heat the remaining olive oil over medium heat and place the patties in the skillet. Cook for 4 minutes on each side. Assemble burgers with the patty, lettuce, sliced avocado, tomato, and onion.
