Ingredients

  • 1 T unsalted butter
  • 1/2 medium onion, finely chopped
  • 1/2 medium red bell pepper, finely chopped
  • 1 1/2 tsp. kosher salt
  • 2 C. long-grain white rice
  • 1 pinch saffron, steeped in 1/4 cup hot water
  • 2 1/2 C. chicken broth
  • 1 strip orange zest
  • 2 bay leaves
  • 1/4 C. golden raisins
  • 1/4 C. chickpeas, rinsed and drained

Preheat your oven to 350°F. Melt butter in a large saucier. Add onion, bell pepper, and a few pinches of salt. Reduce heat and let the onions sweat until translucent. Increase to medium heat and add rice. Stir frequently for four minutes. Add saffron, broth, orange zest, bay leaves, and the remaining salt. Increase heat and bring mixture to a boil. Sprinkle mixture with chickpeas, cover, and transfer to the oven for 15 minutes. Carefully remove orange zest and bay leaves. Garnish with raisins and serve.
