Chickpea Salad with Mangos and Mint

Ingredients
- 1 can of chickpeas, drained and rinsed
- 1 mango medium-ripe
- Kopali Organic Mango
- 4-5 twigs of mint, leaves chopped finely
- 2 Tbs. olive oil
- 1 Tbs. red wine vinegar
- salt
- pepper
Directions
Whisk together the olive oil and vinegar, toss with the rest of the ingredients and the salt and pepper to taste.
