Chickpea Stew

Serve over rice for an easy meal that requires very little cleanup. Hearty, healthy and filling!

Ingredients

  • 2 Tbs. extra virgin olive oil
  • 1 C. red/purple onions or 1 medium onion
  • 2 Tbs. garlic cloves
  • 1 30 oz. can chickpeas/garbanzo beans
  • 1 16 oz. can fat-free chicken broth
  • 1 14 oz. can chopped tomatoes
  • 1 tsp. ground cumin
  • 1 tsp. dried thyme
  • 1 Tbs. honey
  • 1 Tbs. lemon juice
  • 1/2 C. parsley
  • Salt and pepper

Directions

Pour olive oil in saucepan over medium heat. Add onions until wilted (about 12 minutes). Add garlic at 10 minutes. Stir in cumin. Cook 2 more minutes. Rinse garbanzo beans well! Add garbanzos, tomatoes and their juice, thyme, lemon, honey, broth, parsley and salt and pepper to taste. Simmer 15-20 minutes.

Yield: 4 servings
