Chilean Corn Pie

This is a modified recipe from Chile that my grandmother gave to me and has been a family favorite. It is a hearty hamburger meal with wonderful flavors with olives and raisins, onion, eggs and corn. Use with a tossed salad and you have a perfect meal.

  • 3 lb. hamburger meat
  • 2 cans kernel corn
  • 1 C. raisins
  • 1 large onion, sliced
  • 6 hard boiled eggs
  • 1 small jar olives, sliced
  • 1/4 stick butter

Slice onion and saute. Hard boil the eggs and cool. Brown the hamburger. Layer with covering the bottom of casserole with 1/3 of the hamburger, slice 2 hard boiled eggs on top,sprinkle 1/2 raisins on top, sprinkle 1/2 sliced olives , and 1/2 of sauted onion. Add another layer of browned hamburger, sliced eggs, raisins, onions and olives. Cover the top with remaining hamburger meat and top with 2 cans of drained corn and dot with butter. Cook for 45 minutes in 350 degree oven, until warmed and cooked through.
