  • 1 lb. ground beef
  • 1 jar chunky salsa
  • 2 C. canned dark red kidney beans, drained
  • 2 C. canned white beans, drained
  • 1 can diced peeled tomatoes
  • 1 C. frozen corn
  • 2 tsp. chili powder
  • 2 tsp. ground cumin
  • 1/2 C. shredded Cheddar cheese
  • 1 Tbsp. sliced green onion

Preheat the oven to 400 degrees. Cook the beef until brown in a large skillet. Drain the meat and add the salsa, kidney beans, tomatoes, corn, chili powder, and cumin. Cook for 3 minutes while stirring until heated through. Spoon the mixture into a baking dish and bake for 18 minutes. Sprinkle cheese on top and bake another 5 minutes until the cheese is melted. Garnish with green onions before serving.
