I had a craving for chili cheese fries and that inspired this recipe. It has all the components of really good chili-cheese fries, with better quality ingredients. This is comfort food all the way!

Ingredients

  • 1 Tbs. olive oil
  • 1 lb. lean ground beef
  • 3/4 C. chopped onion
  • 1/4 C. chopped celery
  • 1/2 C. chopped green pepper
  • 1/2 tsp. salt
  • 1 tsp. pepper
  • 3 8-oz. can tomato sauce
  • 1/2 C. ketchup
  • 1 C. chunky medium salsa
  • 1 Tbs. apple cider vinegar
  • 1/4 C. brown sugar
  • 1 tsp. prepared mustard
  • 1 15-oz. can kidney beans, drained and rinsed
  • 1 15-oz. can pinto beans
  • 1 pkg. mild chili seasoning
  • 3 Tbs. taco seasoning
  • 2 tsp. hot sauce
  • 5 russet potatoes, washed
  • 1 15 1/2-oz. jar salsa con queso
  • 2 C. shredded cheddar cheese
  • sour cream

Directions

Preheat oven to 300 degrees.

Heat olive oil in large skillet over medium heat. Add ground beef, onions, celery, green peppers, salt and pepper. Sauté 5-6 minutes, or until beef is browned, (breaking beef apart) and veggies are clear. Add tomato sauce, ketchup, salsa, vinegar, sugar, mustard, beans, chili seasoning, taco seasoning and hot sauce. Stir until all ingredients are well combined, turn heat off.

Using a mandolin or other slicing device, slice potatoes 3/16-inch thick.

Pour 1 cup chili mixture into bottom of greased 13x9x3-inch casserole dish. Place one layer potato slices over chili mixture. Spread 2 cups chili mixture evenly over potato layer. Pour 1/3 jar salsa con queso over chili, and spread evenly. Add another layer of potato slices. Repeat layers until only one layer of potato slices remains on top of casserole. Cover with foil.

Bake casserole for 1 hour 45 minutes to 2 hours or until potatoes are cooked through. Remove from oven, and spread shredded cheddar cheese evenly over top of casserole. Return uncovered to oven for 5-6 minutes, or until cheese is melted and bubbly. Remove from oven and serve. Place a dollop of sour cream on each serving.

(For best results, let casserole rest for 5-10 minutes before serving.)
