Chili Chicken

With ground chicken and plenty of vegetables, this chili is a healthier alternative.

  • 2 Tbs. oil
  • 1/3 C. onion, finely chopped
  • 1/3 C. green or red pepper, finely chopped
  • 1 lb ground chicken
  • 1 clove garlic, finely chopped
  • 1 can stewed tomatoes
  • 2 can kidney beans, drained
  • cooked mixed vegetables, cut in small pieces

Heat oil in a medium saucepan over medium heat. Add garlic then the onion cooking till transparent. Then add the tomatoes. Add chicken and continue cooking, stirring and breaking up chicken, until chicken is no longer pink. Add pepper and when almost done add kidney beans. Bring to a boil, reduce to simmer, cover and cook for 30 minutes. Add vegetables and cook until heated through.
