You can enjoy your magical mixture of beans, bell peppers, cheese in just twenty minutes with this recipe!

  • 1 bag boil-in-bag rice
  • 1 Tbs. oil
  • 1 C. onion, chopped
  • 3/4 C. green bell pepper, chopped
  • 1/2 lb. ground turkey breast
  • 1 Tbs. chili powder
  • 1 1/2 tsp. Worcestershire sauce
  • 1/2 tsp. cumin
  • 1/2 tsp. oregano
  • 1/3 tsp. salt
  • 1/3 tsp. pepper
  • 1 can kidney beans, rinsed and drained
  • 1 can Mexican-style tomatoes with jalapeƱo peppers and spices
  • 1 can tomato juice
  • 1/4 C. shredded cheddar cheese

Cook rice as package directs. While rice is cooking, heat oil in skillet over medium heat and add onion, bell pepper, and turkey. Cook for 3 minutes. Stir in remaining ingredients except for cheese and bring to a boil. Cover skillet and reduce to a simmer for 10 minutes. Serve over rice and sprinkle with cheddar.
