This hearty chili has just the right level of spice.

  • 1 lb. lean ground beef
  • 1 16 oz. can whole tomatoes, undrained
  • 1 15-16 oz. can red kidney beans, undrained
  • 1 large onion, chopped (1 C.)
  • 2 garlic cloves, crushed
  • 1 Tbs. chili powder
  • 1/2 tsp. salt
  • 1 tsp. ground cumin
  • 1 tsp. dried oregano leaves
  • 1 tsp. baking cocoa
  • 1/2 tsp. red pepper sauce

Directions

Cook beef, onion and garlic in 3-quart saucepan over medium-high heat about 8 minutes, stirring occasionally, until beef is brown; drain. Stir in remaining ingredients except beans, breaking up tomatoes. Heat to boiling; reduce heat to low. Cover and simmer 1 hour, stirring occasionally. Stir in beans. Heat to boiling; reduce heat to low. Simmer uncovered about 20 minutes, stirring occasionally, until desired thickness.

  • Adding cocoa is sort of like cooking with Mole....... YUMMMMM! And this is a very good recipe and to me the standard for Chili Con Carne (Chili with meat).
