Ingredients

  • 2 cans (4.5 oz. each) mild chopped green chiles, drained
  • 2 lg. tomatoes, seeded and chopped (2 C.)
  • 1 C. Original Bisquick mix
  • 1/2 C. sour cream
  • 3 eggs
  • 2 C. shredded Cheddar cheese (8 oz.)

Heat oven to 375 degrees. Grease 8-inch square pan with shortening. Sprinkle chiles and tomatoes evenly in pan. In small bowl, beat Bisquick mix, sour cream and eggs with wire whisk or hand beater until blended. Stir in cheese. Spoon evenly over chiles and tomatoes. Bake uncovered 35 to 40 minutes or until knife inserted in center comes out clean.
