Ingredients

  • 1 (2 lb.) beef tenderloin
  • 1 T. olive oil
  • 1 shallot, minced
  • Salt and pepper to taste
  • 1 ½ C. red wine
  • 1 red chili, diced
  • ¼ C. brown sugar
  • 2 C. beef broth
  • 1 C. fresh cranberries
  • 2 tsp. balsamic vinegar
  • 1 T. Worcestershire sauce
  • 2 T. butter, unsalted

Directions

In a large skillet, heat oil and saute shallot until fragrant. Add in wine, brown sugar, chili, and cranberries; simmer for 10 to 12 minutes. Pour in broth, balsamic, Worcestershire, and butter. Simmer for an additional 5 minutes. Pour over beef in a crockpot and cook on high for 4 to 5 hours.
