  • 12 chicken legs
  • 4 T. vegetable oil
  • Salt and pepper to taste
  • 1 tsp. cumin
  • 2 tsp. chili powder
  • 1 tsp. ground ginger
  • 2 tsp. ground cinnamon
  • 1 onion, diced
  • 6 cloves garlic, minced
  • 1 (28 oz.) can whole peeled tomatoes
  • ½ C. – 1 C. water (as needed)

In a large skillet, heat oil until smoking. Season chicken legs generously with salt and pepper and add to skillet. Cook for 5 minutes on each side and remove from heat. Add onion and garlic into skillet and sauté until fragrant. Stir in cumin, chili powder, ginger, cinnamon, and any additional salt and pepper. Pour in tomatoes with juice, stir well, and add chicken back into skillet. Cook over low heat for 40 minutes until chicken is cooked through. If sauce ever becomes too thick, stir in a bit of water.
