  • 4 medium racks of baby back ribs
  • ½ C. brown sugar
  • 1 tsp. cumin powder
  • 1 ½ tsp. red chili flakes
  • 1 tsp. cracked black pepper
  • 1 ½ tsp cayenne pepper
  • ¼ tsp. nutmeg
  • ¼ tsp. cinnamon
  • ¼ C. tomato ketchup
  • 2 Tbs. BBQ sauce
  • ¾ C. BBQ sauce
  • 2 Tbs. white wine
  • 1 Tbs. tomato ketchup
  • 1 tsp. Worcestershire sauce
  • Chili peppers, chopped and amount of personal selection

Wash and pat dry the ribs with a towel. Begin by making the marinade. In a medium bowl, mix together the brown sugar, cumin powder, chili flakes, black pepper, cayenne pepper, nutmeg, cinnamon, ¼ tsp. cinnamon, ¼ C. tomato ketchup, and 2 tsp. BBQ sauce. Place ribs in a Ziploc bag and cover with marinade. Refrigerate for 2 hours. Place ribs in a crock pot, cover, and cook on low for 6 hours. For the braise, in a pan combine the ¾ C. BBQ sauce, 2 Tbs. white wine, 1 Tbs. tomato ketchup, Worcestershire sauce, and chopped chili peppers and stir until it becomes a thick syrup. Fire up the grill and place the ribs on, cooking for 3-5 minutes on each side. Baste them with the braising liquid until ribs are nicely glazed. Slice and serve hot.
