  • 10-12 (1/2 oz) chili peppers
  • 4 slices Cheddar cheese
  • 1 lb. lean ground beef
  • ½ tsp. mesquite seasoning
  • 8 slices cooked smoked bacon
  • 4 sesame buns

Warm grill over medium heat.

Remove tops and seeds from peppers. Add peppers to grill and cook for 5 minutes or until skins begin to blister. Remove from heat and set aside.

Combine ground beef and seasoning in a large mixing bowl. Evenly split beef into four portions. Form each portion around one pepper and shape into ¾-inch thick patties. Make sure peppers are completely covered.

Transfer patties to grill and cook for 5 minutes on each side or until reaching an internal temperature of 160 degrees F. Place a burger between each bun and top with cheese, bacon and remaining peppers.
