Chili Rellenos - Stuffed Green Chilies
Ingredients
- 1 lg. can whole green chilies (Ortega)
- 1 lb. Montery Jack cheese
- flour (1 tsp. per egg)
- eggs (1 egg per 2 chilies- whites and yolks separated)
Directions
Drain and rinse chilies, cleaning off any remaining seeds. Slice cheese into pieces that will fit into the chilies. Stuff chilies with cheese. Beat egg whites until stiff peaks form. Combine egg yolk and flour into egg whites. Dip stuffed chilies (1 at a time) into egg mixture. Deep-fry in hot oil untl golden brown. Serve immediately with your favorite salsa or Chili Rellenos Sauce. Serve with rice, refried beans, a tossed salad and corn muffins to complete the meal.
