Creamy avocadoes have been pureed into a silky-smooth soup that's refreshingly cool to sip on a warm summer day. If you have no problem with eating meat, we highly recommend serving this soup with grilled shrimp skewers.

  • 4 Medium Avocados, peeled, pitted, and diced
  • 1 1/2 C. Vegetable Broth
  • 1/2 C. Red Onion, peeled and roughly chopped
  • 1/2 C. Fresh Flat-Leaf Parsley, chopped
  • 1/4 C. + 2 Tbs. Plain Greek Yogurt
  • 3 Tbs. Lime Juice
  • 1/2 tsp. Ground Coriander
  • 1/4 tsp. Garlic Powder

Combine all ingredients along with 2 cups of water in a food processor or high-powered blender, and puree until smooth. Pour soup mixture into a large serving bowl. Cover and refrigerate for 1 hour or until chilled through.
